Cucumber, Feta & Watermelon Salad

There are a hundred ways to make a watermelon salad, but all this girl really cares about is that you watch out for your fingies while cutting the dang thing.

I’ve create a quick little tutorial for all of you.

And now that we have all our digits and tons of this crisp, flavorful fruit, here’s a quick and easy salad recipe for those days when it’s just too hot to cook.


here’s what you’ll need

  • 3 cups seedless watermelon, cubed

  • 1 English cucumber, thinly sliced

  • 1 cup red onion, thinly sliced

  • 1 cup feta cheese crumbles

  • 1/4 cup basil, thinly sliced

  • 1/4 cup mint, thinly sliced

  • 2 tbsp lime juice

  • 1 tsp honey

  • balsamic glaze

  • 2 tbsp extra virgin olive oil

  • sea salt flakes

  • fresh ground pepper


here’s what you’ll need to do

Toss watermelon, cucumber, feta cheese and red onion into a large bowl.

Make your vinaigrette by adding lime juice, honey, olive oil, and a pinch of salt and pepper to a small lidded jar. Put lid tightly on your jar and give it a good shake until blended. 

Add vinaigrette, a healthy pinch of sea salt flakes, and fresh ground pepper to your bowl of watermelon.
Gently stir to incorporate.

Drizzle generously with a balsamic glaze, and garnish with thinly sliced mint and basil leaves. 

Serve immediately, and enjoy!
