Broccoli Salad
Saying a broccoli salad reminds me of time spent on Oahu probably makes me sound slightly insane.
But TRUST when I say if you’re near a Whole Foods, you’re going to want to stop by their deli to get a pint of this beauty to take home with you.
Even better if that Whole Foods is located near a beach in Hawaii, where you can enjoy it on a blanket while the waves slowly make their way closer to you.
Also the perfect pairing for grilled meats, or for eating after a hike on top of a gorgeous mountain peak.
So I guess what I’m trying to tell you is broccoli salad is the ultimate picnic food.
here’s what you’ll need
4 cups broccoli florets, cut into bite-sized pieces
1/2 cup red onion, diced small
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/2 cup carrots, shredded
1/2 cup cooked bacon, chopped
1/2 cup mayo
2 tbsp apple cider vinegar
1 tbsp maple syrup
salt
pepper
here’s what you’ll need to do
Cook bacon according to package directions.
Once bacon is cooked and cool to the touch, chop into small pieces and set aside.
Bring a large pot of water to a boil on your stovetop.
Blanch broccoli in the boiling water for one minute, then immediately transfer to an ice bath to cool.
Drain well and set aside to dry.
Once broccoli is dry, toss it in a large bowl along with red onion, dried cranberries, sunflower seeds, shredded carrots and bacon pieces.
In a small bowl, whisk together mayo, apple cider vinegar, maple syrup, and a pinch of salt and pepper until smooth.
Pour dressing over the bowl of broccoli salad and toss to coat.
Chill for at least an hour, and enjoy!
