Shaved Carrot Salad
Not often, but occasionally I’ll come across a food trend that’s worth sharing - so as part of my Salads That Don’t Suck series, I give you the viral Shaved Carrot Salad.
Will it be your main dish?
Probably not, but it totally could be.
Either way, it’s an incredibly satisfying and delicious recipe for making use of a bag of carrots that are about to turn.
Not to mention, carrots are packed with antioxidants and Vitamins A & C, which help with gut, heart and skin health, and will ultimately leave you happy and glowing.
So I guess we’ll go ahead and call this one a beauty trend, too.

here’s what you’ll need
a bag of carrots, shaved
1 clove garlic, minced
1 lime, juiced
1 tbsp rice vinegar
2 tbsp soy sauce
1 tbsp sesame oil
green onions, thinly sliced
Everything But The Bagel seasoning
here’s what you’ll need to do
Use a peeler to shave an entire pack of washed carrots into long ribbons.
Place carrots in a bowl.
Add lime juice, rice vinegar, soy sauce, and sesame oil.
Let sit for at least 15 minutes before adding a handful of thinly sliced green onions and a little sprinkle of Everything But The Bagel seasoning.
