Cold Spicy Noodles
Got five minutes and a tub of gochujang?
Then you are SO CLOSE to enjoying these cold spicy noodles on the next hot summer day. ☀️
here’s what you’ll need
5 oz somen noodles
eggs, soft boiled
kimchi
cucumber, thinly sliced
green onions, thinly sliced
1.5 tbsp gochujang
1 tbsp honey
1 tbsp rice vinegar
1 tsp sesame oil
here’s what you’ll need to do
Cook somen noodles according to package directions, which typically only takes 2 to 3 minutes once your water is boiling.
Drain and rinse noodles under cold water until chilled.
Meanwhile, make your sauce by whisking gochujang, honey, rice vinegar, and sesame oil in a bowl until incorporated.
Toss the noodles with sauce until fully coated.
Serve topped with a pile of kimchi, cucumber rounds, thinly sliced green onions, a soft boiled egg, and a generous sprinkling of Everything But The Bagel seasoning.
