Tteokbokki
The ultimate comfort food, Tteokbokki is spicy and delicious, and feels like a big old hug.
That is, if hugs leave you with a good lot of upper lip sweat.
here’s what you’ll need
1 lb Korean rice cakes
1 cup mini sausages
1/2 mozzarella cheese, shredded
3 cups chicken stock
3 tbsp gochujang
1 tbsp red pepper flake
1 tbsp soy sauce
1 tbsp sugar
1/2 tbsp honey
2 cloves garlic, minced
green onions, thinly sliced
extra virgin olive oil
optional: mozzarella cheese slices
optional: salt
optional: fresh cracked pepper
here’s what you’ll need to do
Add a drizzle of extra virgin olive oil to a deep sided pan over medium heat.
Give mini sausages a nice little sear in the pan.
In a medium-sized mixing bowl, combine chicken stock, gochujang, red pepper flake, soy sauce, sugar, garlic and honey.
Whisk to incorporate and pour into the pan.
Bring sauce to a simmer and add Korean rice cakes.
Continue to simmer for about 15 minutes, or until the sauce thickens and the rice cakes become soft and chewy.
Once thickened, melt shredded mozzarella cheese into the sauce.
Next level this by dumping everything into an oven proof dish and adding mozzarella slices on top.
Season mozzarella slices with salt and fresh cracked pepper.
Broil in the oven for a couple minutes until cheese is melted and bubbly.
Add a bit of drama and finish it off by lightly and CAREFULLY melting the cheese with a kitchen torch to give it even more texture and flavor.
Garnish with green onions and enjoy!
