Scallion Chicken & Rice
I keep seeing people make the VIRAL Scallion Chicken & Rice inside the Costco rotisserie bag and all I can think about is the lady who went viral for making spaghetti in her sink. 😂
Love the creativity, but I’ll be over here minding my food safety.
Luckily, making it in an adorable little dish doesn’t take away from how insanely fast and delicious this is - especially when you top it with an over-easy egg, chili crisp, and a fistful of cilantro.
YAY.
here’s what you’ll need
a Costco rotisserie chicken
a pot of cooked white rice
a bundle of scallions, thinly sliced
cilantro
soy sauce
sesame oil
chili oil
chili crisp
1 egg per person
extra virgin olive oil
salt
pepper
here’s what you’ll need to do
Cook a pot of rice according to package directions.
Remove your gorgeous Costco rotisserie chicken from the bag and shred the meat before placing in a large bowl or baking dish.
Pro Tip: I like to use gloved hands to shred the chicken (if it’s cool enough to touch). You can keep some bite-sized pieces of the chicken skin to enjoy in this, but be very careful to remove all of the bones when shredding. We don’t want anyone choking on this beautiful dish.
Add cooked rice to the dish. I like to do a 1 to 1 ratio of chicken and rice.
Season to taste with soy sauce, sesame oil, and chili crisp.
Add your bundle of thinly sliced scallions, and stir to incorporate.
Pile a mound of this delicious mix on a plate.
Top with a seasoned over-easy egg and a drizzle of chili crisp.
Garnish the whole thing with cilantro leaves, and enjoy!
