Mapo-style Udon Noodle Bowl

here’s what you’ll need
1 lb ground pork
2 cloves garlic, minced
green onions, thinly sliced
silken tofu
1 tbsp Doubanjiang
1 tbsp Shaoxing wine
1/2 tbsp black vinegar
1/2 tsp chili powder
1/2 tsp Sichuan chili powder
extra virgin olive oil
here’s what you’ll need to do
Over medium heat, saute garlic and Doubanjiang in a drizzle of extra virgin olive oil until fragrant.
Add ground pork to the pan.
Saute until browned.
Meanwhile, cook udon noodles according to package directions, and set aside.
Throw silken tofu into the blender and give it a blitz until smooth.
Set aside.
Once your pork is cooked through, add Shaoxing wine, black vinegar, chili powder, and Sichuan chili powder.
Stir to incorporate.
Place udon in the bottom of a bowl.
Top with spicy pork.
Add a dollop of silken tofu.
Sprinkle with green onions, mix well, and enjoy!
